Ingredients

  • 1 medium sweet potato
  • 2 eggs
  • ½ cup butter
  • 1 tsp vanilla extract
  • 1 cup flour
  • ¾ cup sugar
  • ½ tsp salt
  • ½ tsp baking powder
  • ¾ tsp baking soda
  • tsp ground cinnamon
  • ¾ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves

Instructions

  • Cook the sweet potato (I usually pop mine in the instant pot on pressure cook for 20 minutes but if you don't have one you can bake in a 425°F oven for about 45-50 minutes or until fork tender). Once done the skin should peal off easily.
  • Mash the sweet potato and add in eggs, melted butter, and vanilla and stir until combined.
  • In a separate bowl combine the dry ingredients and mix into wet ingredients until fully incorporated.
  • Bake in a greased loaf pan at 350°F for about 45-50 minutes or until a toothpick comes out clean. Let cool and enjoy!
