- 1 sweet potato
- 1 cup cooked wild rice
- 15 oz black beans drain and rinsed
- 4 oz green chiles in can
- 1 tbsp lime juice
- ½ onion diced
- ⅓ cup all-purpose flour
- 2 tbsp taco seasoning
Cook, peel, and mash sweet potato. I usually cover mine in foil and pop in an oven preheated to 425°F for 45-50 minutes.
In a large bowl mix together mashed sweet potato, wild rice, black beans, green chiles, lime juice, diced onion, flour, and taco seasoning, until the burger starts to come together while keeping the beans fairly whole.
Using a ⅓ measuring cup, shape into patties and cook in a pan coated in cooking spray over medium heat until golden brown, about 5 minutes on each side.
