Shrimp Alfredo
If you don't like shrimp, swap for chicken or leave out the meat for a vegetarian option!

Shrimp
- 8 large shrimps peeled and deveined
- ½ tbsp olive oil
- 1 clove minced garlic
- ¼ tsp red pepper flakes
- 1 tsp dried parsley
- salt and pepper
Alfredo
- 4 oz pasta of choice
- 1 tbsp butter
- ⅓ cup heavy cream
- ¼ cup parmesan cheese
- ⅓ cup frozen chopped spinach
- pepper to taste

Bring a pot of salted water to a boil. Cook pasta of choice until al dente and drain, reserving about ½ cup of pasta water.
Heat olive oil in a large pan over medium heat and add in minced garlic. Saute for about a minute or until fragrant then stir in chili flakes and parsley. Add in the shrimp and cook until opaque, about 2-3 minutes per side. Season with salt and pepper to taste.
Remove the shrimp from the pan and add in the butter. Once melted, add the heavy cream and stir until warmed through. Add cooked pasta, shrimp, parmesan cheese, and spinach, to the cream mixture and mix until well incorporated, thinning out with pasta water as needed.
Top with freshly cracked black pepper and enjoy!
