Rigatoni Bolognese

- 1 box Rigatoni noodles
- 1 tbsp olive oil
- ½ onion (diced)
- 1 Tbsp minced garlic
- 1 lb ground beef I like to use a leaner blend like 90/10
- 1 Tbsp Italian seasoning
- 2 tsp fennel seeds
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- ½ tsp red pepper flakes
- 1 jar pasta sauce about 24 oz
- ¼ cup heavy cream
- ½ cup freshly grated parmesan plus more for serving
- Salt to taste
In a large saucepan cook olive oil, onion, and garlic over medium heat until onions are translucent and garlic is fragrant.
Add ground beef and cook until there is no pink left and the meat starts to caramelize.
Add spices to the beef mixture and cook 1-2 minutes.
Add the jar or pasta sauce and let simmer for 15 minutes.
While sauce is cooking, bring a pot of salted water to a boil (when I say salty I mean like sea water salty) and cook noodles until al dente.
Drain noodles reserving about 1/2 cup of pasta water
Add cream to the pasta sauce and stir to combine.
Add noodles and parmesan cheese, stirring in pasta water as needed until pasta is creamy.
Taste and adjust for salt.
