- 2¼ cup all purpose flour
- 1¼ cup sugar
- 3 eggs
- 2 sticks butter
- 2 tsp baking soda
- ½ tsp salt
- 1 tbsp cinnamon
- 1 tsp ground ginger
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- 1 tsp vanilla extract
- 2 cups freshly grated carrots
- 1 peeled, grated apple I used Honey Crisp
- 1 cup fresh pineapple crushed
- 1 cup raisins
- ⅔ cup chopped walnuts
While you grate carrots and apple, let the raisins soak in a bowl of boiling water to rehydrate.
Preheat oven to 350°.
In a bowl combine flour, sugar, salt, and spices and stir until combined.
In a large bowl, melt your butter and mix in eggs, vanilla extract, grated carrots, grated apples, crushed pineapples, drained raisins, and walnuts.
Gently fold in dry ingredients and stir until combined.
Grease an oversized muffin pan, and fill with batter until ⅔ full and bake for 35-40 minutes or until a toothpick comes out clean. Let cool for 10 minutes and enjoy.
