- ¾ cup flour
- 2 tsp baking powder
- ¼ tsp salt
- 2 tsp sugar
- ¾ cup milk
- ½ tsp vanilla extract
- 2 tbsp melted butter
- avocado oil for frying
Combine flour, baking powder, salt, and sugar in a bowl and stir to combine.
In a separate bowl combine milk, vanilla extract, and melted butter and mix.
Mix wet ingredients into the dry and stir until just combined. Don't over mix or the pancakes will come out tough.
Heat a pan or griddle over medium high heat. Add about a teaspoon of avocado oil and pour in about ⅓ cup of batter and fry pancakes for 3-4 minutes per side or until golden brown.
Serve with extra butter and maple syrup.
