- 2 cups arugula
- 2 tbsp balsamic vinaigrette
- ¼ cup fresh mozzarella
- ¼ cup diced tomato
- 2 slices prosciutto di parma
- 1 tbsp pesto
- salt and pepper to taste
In salad bowl, toss arugula with balsamic vinaigrette, salt to taste and set aside.
Dice tomato and season with salt and pepper.
Roughly shred fresh mozzarella and prosciutto, and top arugula with all the ingredients. Finish with pesto and enjoy.
