Brown Butter Cinnamon Rolls

Browned Butter
- 1 cup unsalted butter
- 3 tbsp dry milk powder optional
Dough
- ½ cup warm milk
- 1½ tsp active dry yeast
- ¼ cup granulated sugar divided
- 1 egg
- ¼ cup browned butter
- 2 cups bread flour
- ½ tsp salt
Filling
- ½ cup browned butter
- ¾ cup dark brown sugar
- 1 tbsp cinnamon
Icing
- ¼ cup browned butter
- 1½ cup powdered sugar
- 3 tbsp heavy cream
- ¼ tsp salt
- ½ tsp vanilla extract
For the brown butter
Cook one cup of unsalted butter in a medium saucepan with milk powder over medium heat, stirring and scraping the bottom of the pan often with a heatproof rubber spatula. The butter will start to foam, continue stirring and let cook for 3-4 minutes until the butter browns and has a nutty aroma. Remove from heat and transfer to a heatproof bowl.
For the dough
Mix warm milk, yeast, and 1 teaspoon of sugar. Let sit for 10 minutes, until foamy.
In a large mixing bowl, combine flour, salt, remaining sugar, egg, brown butter, and yeast mixture and stir until a shaggy dough forms. Turn out onto a floured surface and knead for 5 minutes.
Place in an oiled bowl, cover, and let rise for one hour or until doubled in size.
Assembling the Rolls
Roll the dough into a 9x16 inch rectangle and spread brown butter evenly over the dough. Sprinkle brown sugar and cinnamon evenly over dough and gently press into the butter. Starting from the shorter side, roll the dough tightly until you have a log. Cut the log into 8 even pieces.
Place 6 rolls around the perimeter of a cake pan with one in the center and cover with heavy cream, let rise for another 30 minutes.
Bake at 350°F for 25-30 minutes.
For the Icing
Combine melted brown butter, powdered sugar, vanilla extract, heavy cream, and salt and stir to combine, pour desired amount over warm cinnamon rolls.
