PUMPKIN BREAD IS MEDIOCRE. And from here on out we should be replacing the pumpkin with mashed sweet potato.
Sweet Potato Bread
Like pumpkin bread… but better!

Ingredients
- 1 medium sweet potato
- 2 eggs
- ½ cup butter
- 1 tsp vanilla extract
- 1 cup flour
- ¾ cup sugar
- ½ tsp salt
- ½ tsp baking powder
- ¾ tsp baking soda
- 1½ tsp ground cinnamon
- ¾ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
Instructions
- Cook the sweet potato (I usually pop mine in the instant pot on pressure cook for 20 minutes but if you don't have one you can bake in a 425°F oven for about 45-50 minutes or until fork tender). Once done the skin should peal off easily.
- Mash the sweet potato and add in eggs, melted butter, and vanilla and stir until combined.
- In a separate bowl combine the dry ingredients and mix into wet ingredients until fully incorporated.
- Bake in a greased loaf pan at 350°F for about 45-50 minutes or until a toothpick comes out clean. Let cool and enjoy!
