Morning Glory Muffins

Kinda like carrot cake, but better.

Ingredients

  • cup all purpose flour
  • cup sugar
  • 3 eggs
  • 2 sticks butter
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 tbsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • 1 tsp vanilla extract
  • 2 cups freshly grated carrots
  • 1 peeled, grated apple I used Honey Crisp
  • 1 cup fresh pineapple crushed
  • 1 cup raisins
  • cup chopped walnuts

Instructions

  • While you grate carrots and apple, let the raisins soak in a bowl of boiling water to rehydrate.
  • Preheat oven to 350°.
  • In a bowl combine flour, sugar, salt, and spices and stir until combined.
  • In a large bowl, melt your butter and mix in eggs, vanilla extract, grated carrots, grated apples, crushed pineapples, drained raisins, and walnuts.
  • Gently fold in dry ingredients and stir until combined.
  • Grease an oversized muffin pan, and fill with batter until ⅔ full and bake for 35-40 minutes or until a toothpick comes out clean. Let cool for 10 minutes and enjoy.
