Fluffly Pancakes

Who needs Aunt Jemima when you can make pancakes from scratch!

Ingredients

  • ¾ cup flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 tsp sugar
  • ¾ cup milk
  • ½ tsp vanilla extract
  • 2 tbsp melted butter
  • avocado oil for frying

Instructions

  • Combine flour, baking powder, salt, and sugar in a bowl and stir to combine.
  • In a separate bowl combine milk, vanilla extract, and melted butter and mix.
  • Mix wet ingredients into the dry and stir until just combined. Don't over mix or the pancakes will come out tough.
  • Heat a pan or griddle over medium high heat. Add about a teaspoon of avocado oil and pour in about ⅓ cup of batter and fry pancakes for 3-4 minutes per side or until golden brown.
  • Serve with extra butter and maple syrup.
