Who needs Aunt Jemima when you can make pancakes from scratch!

Ingredients
- ¾ cup flour
- 2 tsp baking powder
- ¼ tsp salt
- 2 tsp sugar
- ¾ cup milk
- ½ tsp vanilla extract
- 2 tbsp melted butter
- avocado oil for frying
Instructions
- Combine flour, baking powder, salt, and sugar in a bowl and stir to combine.
- In a separate bowl combine milk, vanilla extract, and melted butter and mix.
- Mix wet ingredients into the dry and stir until just combined. Don't over mix or the pancakes will come out tough.
- Heat a pan or griddle over medium high heat. Add about a teaspoon of avocado oil and pour in about ⅓ cup of batter and fry pancakes for 3-4 minutes per side or until golden brown.
- Serve with extra butter and maple syrup.
