Ingredients

  • 2 cups arugula
  • 2 tbsp balsamic vinaigrette
  • ¼ cup fresh mozzarella
  • ¼ cup diced tomato
  • 2 slices prosciutto di parma
  • 1 tbsp pesto
  • salt and pepper to taste

Instructions

  • In salad bowl, toss arugula with balsamic vinaigrette, salt to taste and set aside.
  • Dice tomato and season with salt and pepper.
  • Roughly shred fresh mozzarella and prosciutto, and top arugula with all the ingredients. Finish with pesto and enjoy.
