Morning Glory Muffins
Kinda like carrot cake, but better.
Servings: 12 Large Muffins

Ingredients
- 2¼ cup all purpose flour
- 1¼ cup sugar
- 3 eggs
- 2 sticks butter
- 2 tsp baking soda
- ½ tsp salt
- 1 tbsp cinnamon
- 1 tsp ground ginger
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- 1 tsp vanilla extract
- 2 cups freshly grated carrots
- 1 peeled, grated apple I used Honey Crisp
- 1 cup fresh pineapple crushed
- 1 cup raisins
- ⅔ cup chopped walnuts
Instructions
- While you grate carrots and apple, let the raisins soak in a bowl of boiling water to rehydrate.
- Preheat oven to 350°.
- In a bowl combine flour, sugar, salt, and spices and stir until combined.
- In a large bowl, melt your butter and mix in eggs, vanilla extract, grated carrots, grated apples, crushed pineapples, drained raisins, and walnuts.
- Gently fold in dry ingredients and stir until combined.
- Grease an oversized muffin pan, and fill with batter until ⅔ full and bake for 35-40 minutes or until a toothpick comes out clean. Let cool for 10 minutes and enjoy.
