Peach Tart

Ingredients
Crust
- 1½ cups all purpose flour
- ½ tsp salt
- 2 tbsp granulated sugar
- ¾ cup unsalted butter 1½ sticks (cut into cubes)
- ¼-⅓ cup ice water
Filling
- 2½ lbs yellow peaches sliced
- 1 cup granulated sugar
- ¼ cup all purpose flour
- ½ tsp cinnamon
- ¼ tsp salt
Assembly
- 1 egg beaten
- 2 tbsp raw brown sugar
Instructions
For Dough
- In the bowl of a food processor, add flour, salt, sugar, and cubed butter and pulse until crumbly. Slowly stream in ice water until dough comes together. Form into a disc, wrap in saran wrap and chill in the refrigerator for at least 30 minutes.
For Filling
- Peel, core, and slice peaches. Add sugar, flour, cinnamon, and salt and stir to combine.
To Assemble
- Preheat oven to 375°.
- Flour both your work surface and dough and roll out the dough until it's a circle ~14 inches in diameter, adding flour as necessary so that your dough doesn't stick.
- Grease a 10 inch, deep pie dish (or cast iron skillet) and lay in your pie crust. Add in the peach filling and fold over crust edges.
- Brush the edges with beaten egg and dust with raw brown sugar.
- Bake at 375° for 55-60 minutes, until crust is golden brown. (Depending on your oven you may need to kick the oven temp up to 425° to brown the crust for about 5 minutes at the end).
