Ingredients

  • 4 russet potatoes
  • 1 white onion
  • 1 tbsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ¼ cup olive oil

Instructions

  • Peel potatoes, dice into ½ inch cubes, and rinse with cold water. Dice onion into ½ inch cubes and set aside.
  • In a large pot add potatoes, salt, and cover with water. Bring to a boil and cook until potatoes are fork tender and strain.
  • Let the potatoes let off some steam and dry out a bit while the oil heats in a large non-stick skillet over medium-high heat.
  • Add potatoes, raw onion, and seasonings and stir to coat then don't touch for 6-8 minutes.
  • Flip the potatoes and cook for another 6-8 minutes until crispy on all sides. Serve and enjoy!
