Crispy Breakfast Potatoes

Ingredients
- 4 russet potatoes
- 1 white onion
- 1 tbsp salt
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp black pepper
- ¼ cup olive oil
Instructions
- Peel potatoes, dice into ½ inch cubes, and rinse with cold water. Dice onion into ½ inch cubes and set aside.
- In a large pot add potatoes, salt, and cover with water. Bring to a boil and cook until potatoes are fork tender and strain.
- Let the potatoes let off some steam and dry out a bit while the oil heats in a large non-stick skillet over medium-high heat.
- Add potatoes, raw onion, and seasonings and stir to coat then don't touch for 6-8 minutes.
- Flip the potatoes and cook for another 6-8 minutes until crispy on all sides. Serve and enjoy!
